The existing vineyards of La Winery cover an area of 92 hectares, of which 47 hectares are grown in the vineyard called "Enclos". The grapes are often used to make the winery's official wine. The Paddock vineyard is close to the Gironde River, with its highest altitude only 16 meters higher than the Gironde River. The 47 hectares of land have excellent terroir, mainly gravel and clay, mixed with deep limestone. The deep gravel soil in the garden is very conducive to the growth of grape root systems. There are 76% Cabernet Sauvignon, 22% Merlot, 2% Cabernet Franc and Petit Verdot in the vineyard. The total number of grapevines reaches more than 800,000, of which the largest The ancient vines are over 100 years old.

Since 2009, the technical team of Chateau Latour has decided to apply some new planting methods to balance the relationship between grapevines, soil and environment, so that the terroir can be interpreted by the wine in the best way. For example, the winery reuses horses to plow the fields to protect vineyard soil and promote sustainability. The winery replaces older, less active vines every year at a rate of approximately 3%. Land where vines have been removed is also left fallow to maintain stable land quality and yields. In August 2015, all vineyards of Chateau Latour were operated according to organic farming methods. In 2018, Chateau Latour officially obtained the organic planting certification from the French International Ecological Certification Center (Ecocert). In addition, the winery has also experimented with biodynamic methods in the vineyards, mixing different agents according to the needs of the vineyards, and spraying according to the specific weather conditions in different years.
After picking, La Winery classifies the grapes according to the different characteristics of the terroir, then removes the stems and peels, and then ferments them in temperature-controlled stainless steel tanks for about 3 weeks to fully extract the various flavors of the grapes. Chateau Latour has been using stainless steel tanks for fermentation since the 1960s, and was one of the first wineries in Bordeaux to use stainless steel tanks for fermentation. The next month after fermentation, the winery will perform malolactic fermentation on the wine to make the wine taste smoother, rounder and more delicate. The winery then puts the wine into wooden barrels to begin maturation. During the blending phase, the winery team, along with Frederic Ingels and winemaking consultant Eric Boissenot, will taste all batches of wine to decide which liquids will be used as the first wine, Second and third wines. At this time, the winemaker will also taste the pressed wine and appropriately select higher-quality pressed wine and free-flow wine to mix.

The oak barrels used by Chateau Latour come from the forests of central France, and the first-name wine is matured in new oak barrels every year. During the first year of maturation, winemakers will use glass stoppers with weak seals to allow the wine to come into contact with air to a certain extent, and add barrels every two weeks. Before the arrival of the next summer, the wine will be transferred to another cellar and aged in sealed barrels at a constant temperature for 10-13 months. After this maturation, the winemaker clarifies the wine with egg whites, bottles it after 45 days to completely remove the sediment, and tastes the wine again to determine when the wine was bottled. In 2012, Latour decided not to sell its vintage wines anymore, so the winery extended the bottle aging time of the wines. Generally speaking, Latour's first wine, second wine and third wine must be aged in the cellar for 8-10 years, 6-8 years and 4-6 years respectively before being put on the market.
