The estate does not use vines younger than 10 years, covering about 20 hectares, in its wine. Vines used for the grand vin average 45 years old. In the parcel known as La Gravière, vines planted in 1886 are as old as 118 years, while vines in two other parcels are more than 80 years old. The vineyard is managed by technical director Charles Chevallier, with careful cultivation and different fertilisation strategies for vines of different ages so that each harvest reflects the finest fruit Bordeaux can produce.
At Château Lafite, every two to three vines yield just one bottle of wine, and annual production across the estate is kept to 20,000–30,000 cases, with 12 bottles of 750 ml per case. Today, Château Lafite combines traditional craftsmanship with modern technology. The technical team relies on tasting to decide the timing of harvest, fermentation and racking. All wine must ferment in oak barrels for 18–25 days, using barrels made in the estate's own cooperage. Each barrel is tasted several times so that the finest lots can be selected. The first racking takes place in March of the following year, when blending is carried out. The wine then ages in the cellar for 18–24 months, with further rackings to separate the wine from its lees. The estate's finest vintages include 1982, 1986, 1996, 1998, 2000, 2003, 2008, 2009 and 2010.
